Sushi Amamoto (Previously Michelin 1 Star Taku), Mayfair

Located in the heart of Mayfair, Sushi Amamoto (Previously as Taku) is an intimate 16-seat omakase restaurant brought to life under the direction of Michelin-starred chefs. Owned by the Leong family, brothers Lucas and Geoff, the restaurant holds special significance as our very first project delivered with them, marking the beginning of a valued collaboration in high end hospitality. This project demonstrates our expertise in restaurant interior design in London, combining traditional Japanese aesthetics with contemporary minimalism to create a serene and elegant dining environment.

Natural finishes, including wood and stone, evoke warmth and tranquility, reflecting the essence of Japanese simplicity. Soft, indirect wall lighting creates a gentle ambient glow, while individual spotlights above each seat highlight the artistry of the dishes, ensuring an immersive and intimate dining experience.

The design prioritises the culinary experience, with a minimal and functional layout that allows diners to focus on the food. At just 926 square feet, this may be one of the smallest Michelin-starred restaurants in London. Every element was meticulously crafted to maximise the narrow footprint, from storage and cloakrooms to washing areas, without compromising simplicity or spatial clarity.

The design process was shaped by collaboration with Chef Watanabe across a language barrier, with drawing as the primary medium for communication. Concepts were explored through sketches, plans, and material studies. What could have been a limitation became a strength, reinforcing precision, clarity, and our architectural voice in high-end hospitality and restaurant design.

Within just four months from opening in 2023, Taku earned a Michelin Star, a testament to its exceptional dining experience. It has retained this distinction for three consecutive years and is poised to continue building on this success in 2026 trading as Sushi Amamoto under the new Executive Chef Patron Shogo Amamoto.
