Capacity Scaling: Expanding the Operational Footprint of an Established Brand

A beloved, family-run institution, Sasa Sushi had built a strong reputation for quality and intimacy, but its original footprint had reached its limit. They came to us with a strong brand and great standing within the community, but they had outgrown their original space. 

The brief was a delicate balancing act. We were tasked with maintaining the cozy, family-friendly atmosphere the owners had fostered for over a decade, while simultaneously creating a new, high-capacity environment with the infrastructure to support long-term growth. 

Navigating Heritage Constraints: Engineering a 2,700 Sq Ft Grade II Landmark.

The transition for Sasa Sushi was huge, moving from an intimate shop into a 2,700-square-foot Grade II listed landmark. Working in close consultation with the Islington Council Heritage Team, we developed a design that respected the building’s 19th-century bones while delivering a contemporary Japanese dining experience. Certain elements, such as the original cast-iron fireplace, were restored and emphasized as focal points, creating a tangible connection between London’s architectural history and the restaurant’s new chapter. Elements that clashed with the minimalist Japanese aesthetic, such as the Victorian red floor tiles, were discreetly and non-invasively concealed to maintain the natural, traditional Japanese atmosphere at the heart of the interior. 

Spatial Anchoring: Designing a Bespoke Centrepiece.

This project was very much about dialogue between eras. The building’s original, historic roof dome provides a dramatic canopy, offering a striking contrast against the clean lines and natural materiality of the new interior. At the heart of the dining room sits the project’s definitive centrepiece: a bespoke blue sushi bar.

Crafted from traditional Japanese woodwork and stained in the brand’s signature hue, the bar allows the natural timber grain to remain visible, anchoring the space with a sense of modern gravity. This feature pushed the boundaries of the client’s original vision, embodying our core design intent: to remain deeply rooted in tradition while striving to be forward thinking and original. 

The Expansion Blueprint: From Neighbourhood Asset to Flagship Destination

The restaurant stands as a distinctive fusion of cultural heritage and modern design. It exemplifies what ambitious, family-run businesses are all about. By translating fifteen years of community reputation into this landmark 2,700-square-foot site, the brand is provided with a brand new lease of life. 

While this project was a significant physical expansion, its true purpose was creating the infrastructure for a new generation of growth. By massively increasing the operational scope of the space, but preserving the brand’s familiar feel, Sasa Sushi has the capacity to grow. It now stands not just as a neighborhood favorite, but as a flagship destination. The space honors its roots while firmly establishing its place in London’s future culinary landscape.
